Pasta Fagioli




Ingredients
Makes 6 servings

  • 2 tbsp extra-virgin olive oil
  • 2 oz bacon, chopped
  • 1 medium onion, chopped
  • 2 tsp garlic, minced
  • 1 can cannellini bean
  • 1/2 cup canned tomato sauce
  • 1 cup ditalini
  • 5 cups low-sodium chicken broth
  • ground black pepper
  • freshly grated parmesan

Herbs (place in an empty tea bag)
  • 1 sprig rosemary
  • 1 sprig thyme
  • 2 dried bay leaves





Method

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add in the onion, bacon, garlic, and saute until the onion is tender.
  3. Add in the beans, tomato sauce, chicken broth,and herb bag. Cover and bring soup to a boil.
  4. Reduce the heat to medium and simmer for about 10 minutes. Discard the herb bag.
  5. Puree 1 cup of the bean mixture in a blender until smooth.
  6. Add the ditalini pasta and cook until it is tender.
  7. Return the puree to the saucepan and mix well.
  8. Season the soup with ground black pepper.
  9. Ladle the soup into individual bowls and top with some parmesan cheese and serve.
