Pasta Fagioli
Ingredients
Makes 6 servings
- 2 tbsp extra-virgin olive oil
- 2 oz bacon, chopped
- 1 medium onion, chopped
- 2 tsp garlic, minced
- 1 can cannellini bean
- 1/2 cup canned tomato sauce
- 1 cup ditalini
- 5 cups low-sodium chicken broth
- ground black pepper
- freshly grated parmesan
Herbs (place in an empty tea bag)
- 1 sprig rosemary
- 1 sprig thyme
- 2 dried bay leaves
Method
- Heat the olive oil in a large saucepan over medium heat.
- Add in the onion, bacon, garlic, and saute until the onion is tender.
- Add in the beans, tomato sauce, chicken broth,and herb bag. Cover and bring soup to a boil.
- Reduce the heat to medium and simmer for about 10 minutes. Discard the herb bag.
- Puree 1 cup of the bean mixture in a blender until smooth.
- Add the ditalini pasta and cook until it is tender.
- Return the puree to the saucepan and mix well.
- Season the soup with ground black pepper.
- Ladle the soup into individual bowls and top with some parmesan cheese and serve.
