Simple Fried Rice


Vegetarian Fried Rice
Ingredients
Makes 4 to 6 servings

  • 3 cups cooked rice, preferably cold rice cooked the day before
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup Taiwanese sausage (xiang chang), diced 
  • 2 eggs, lightly beaten
  • 1/2 cup green peas
  • 1/2 cup sweet corns 
  • 1/2 cup carrots, diced
  • 1/4 cup scallion, finely chopped
  • 1/2 tsp soy sauce
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 1/2 tsp fish sauce (optional)


Method

  1. Add the oil in a wok over medium high heat. Stir fry garlic for a few seconds, then add in diced sausages and cook for 2 minutes.
  2. Add the beaten eggs and scramble slightly. Stir in peas, corns, carrots, and cook for 2 minutes.
  3. Add in cold rice, soy sauce, salt, pepper  and continue frying for a few minutes until rice is fully cooked and separated from one another.
  4. Stir in the scallions and mix well with fried rice. Adjust the seasonings to your taste.
  5. For better presentation, pack the rice into a small rice bowl and flip it over onto the plate. You may have to jiggle the rice a bit, but it should fall out of the bowl easily.
  6. Serve immediately in a plate.
