Simple Fried Rice
Vegetarian Fried Rice |
Ingredients
Makes 4 to 6 servings
- 3 cups cooked rice, preferably cold rice cooked the day before
- 3 tbsp vegetable oil
- 3 cloves garlic, minced
- 1/2 cup Taiwanese sausage (xiang chang), diced
- 2 eggs, lightly beaten
- 1/2 cup green peas
- 1/2 cup sweet corns
- 1/2 cup carrots, diced
- 1/4 cup scallion, finely chopped
- 1/2 tsp soy sauce
- 1/2 tsp salt
- 1/4 tsp ground white pepper
- 1/2 tsp fish sauce (optional)
Method
- Add the oil in a wok over medium high heat. Stir fry garlic for a few seconds, then add in diced sausages and cook for 2 minutes.
- Add the beaten eggs and scramble slightly. Stir in peas, corns, carrots, and cook for 2 minutes.
- Add in cold rice, soy sauce, salt, pepper and continue frying for a few minutes until rice is fully cooked and separated from one another.
- Stir in the scallions and mix well with fried rice. Adjust the seasonings to your taste.
- For better presentation, pack the rice into a small rice bowl and flip it over onto the plate. You may have to jiggle the rice a bit, but it should fall out of the bowl easily.
- Serve immediately in a plate.
