Spicy Green Bean Salad 凉拌四季豆


Ingredients
Makes 4 servings

  • 1 pound green beans
  • 1 tsp salt
  • 1 clove garlic, minced
  • 1 1/2 tbsp vegetarian mushroom oyster sauce
  • 2 tsp rice vinegar
  • 2 tsp sesame oil
  • 1 red chili pepper, chopped
  • hot banana pepper rings for garnishing


Method
  1. Remove the ends of green beans, and wash them for a few times. 
  2. Blanch the green beans in boiling water with salt for about 5 to 8 minutes, and shock them in cold water.
  3. Remove the beans with a strainer as soon as cool to the touch. Set aside. 
  4. In a bowl, mix the garlic, oyster sauce, vinegar, sesame oil , and red chili pepper with the green beans well. 
  5. Refrigerate the green beans for about 30 minutes. Adjust the seasoning, adding more salt or vinegar as desired.
  6. Garnish with hot banana pepper before serving. 


I mixed a jalapeno pepper with the green beans by accident :-)
