Reduced Fat Peanut Butter Cookies

Serve with English Breakfast Tea

Ingredients
Makes 2 dozens

  • 1 cup reduced fat creamy peanut butter
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract



Method

  1. In a large bowl, mix all ingredients together until well blended. Refrigerate the dough for about 30 minutes.
  2. Preheat oven to 325ºF. 
  3. Shape dough into 1" balls, and place balls  1" apart on ungreased baking sheets.
  4. Flatten gently with tines of a fork . I skipped this step since my dough is a little sticky without refrigeration :-( 
  5. Bake 15 minutes or until golden brown.
  6. Cool completely on wire racks. 



Refrigerated dough is easier to shape than the one at room temperature
