Reduced Fat Peanut Butter Cookies
Serve with English Breakfast Tea |
Ingredients
Makes 2 dozens
- 1 cup reduced fat creamy peanut butter
- 1 cup sugar
- 1 large egg
- 1 tsp vanilla extract
Method
- In a large bowl, mix all ingredients together until well blended. Refrigerate the dough for about 30 minutes.
- Preheat oven to 325ºF.
- Shape dough into 1" balls, and place balls 1" apart on ungreased baking sheets.
- Flatten gently with tines of a fork . I skipped this step since my dough is a little sticky without refrigeration :-(
- Bake 15 minutes or until golden brown.
- Cool completely on wire racks.
Refrigerated dough is easier to shape than the one at room temperature |
