Banana Chocolate Cookies


Ingredients
Makes 2 dozen
  • 1/2 cup white whole wheat flour
  • 1/2 cup unbleached all purpose flour
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 2/3 cup ripe banana
  • 1/2 tsp vanilla extract
  • 3/4 cup semisweet chocolate, chopped or chocolate chips

Method
  1. Sift the flour, baking powder, baking soda and salt together into a medium bowl. Set aside.
  2. Cream the butter and sugar until light and fluffy.
  3. Beat in the egg, banana and vanilla extract to the butter mixture.
  4. Gradually add the flour mixture to the butter mixture, and stir well.
  5. Add the chopped chocolate, and mix well.
  6. Using a 2" diameter ice cream scoop, portion the batter onto the prepared pans, about 1 1/2" apart.
  7. Bake at 350ºF for 10 to 12 minutes or until the edges are lightly brown.
  8. Cool completely on the baking pans.
