Banana Chocolate Cookies
Ingredients
Makes 2 dozen
- 1/2 cup white whole wheat flour
- 1/2 cup unbleached all purpose flour
- 1 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1/3 cup butter
- 1/2 cup sugar
- 1 egg
- 2/3 cup ripe banana
- 1/2 tsp vanilla extract
- 3/4 cup semisweet chocolate, chopped or chocolate chips
Method
- Sift the flour, baking powder, baking soda and salt together into a medium bowl. Set aside.
- Cream the butter and sugar until light and fluffy.
- Beat in the egg, banana and vanilla extract to the butter mixture.
- Gradually add the flour mixture to the butter mixture, and stir well.
- Add the chopped chocolate, and mix well.
- Using a 2" diameter ice cream scoop, portion the batter onto the prepared pans, about 1 1/2" apart.
- Bake at 350ºF for 10 to 12 minutes or until the edges are lightly brown.
- Cool completely on the baking pans.
