Japchae 炒粉絲 (stir-fried noodles with vegetables)
Ingredients
Makes 6 servings
Beef Ingredients
- 1 cup beef tenderloin, cut into thin strips
- 1/2 tbsp soy sauce
- 1/2 tbsp cooking wine
- 1 tsp garlic, minced
- 1 1/2 tsp sugar
- pinch of ground black pepper
Other Ingredients
- 8 oz Korean sweet potato noodle (See picture below)
- 1/2 onion, sliced
- 1/2 carrot, cut into matchsticks
- 6 dried shiitake, soaked and sliced
- 2 cloves garlic, minced
- 2 scallions, chopped
- 6 oz napa cabbages, thin strips (traditionally using spinach, but I forgot to get it :-))
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 2 tbsp sugar
- 1 tbsp sesame seeds
- 2 tbsp vegetable oil
- pinch of ground black pepper
Method
- In a small bowl, mix the beef with the rest of marinade ingredients well. Set aside for at least 30 minutes.
- Cook the noodles in boiling water in a large pot for about 5 to 6 minutes(taste it to see if it is cooked properly.)
- Drain the noodles and cut it with kitchen scissors to shorter pieces.
- Add 1 tbsp sesame oil and 1 tbsp of soy sauce to the noodles. Mix well and set aside.
- In a saute pan over high heat, add 1 tbsp of oil, and cook the marinated beef well and set aside.
- Add 1 tbsp of oil, saute the onion, carrot, mushroom for about 2 minutes.
- Add the garlic, scallions, cabbages, soy sauce, sesame oil, sugar, and pepper. Stir-fried for about 3 minutes.
- Add the beef and noodles in the saute pan, and mix well with the veggies.
- Adjust the seasonings by adding 1 tsp soy sauce or sugar to the noodles.
- Garnish with sesame seeds and serve.
