Matcha Green Tea Steamed Buns 綠茶饅頭
Matcha green tea steamed buns are mixed with chocolate steamed buns |
Ingredients
Makes 8 buns
- 1 1/4 cups lukewarm water
- 1 1/4 tsp active dry yeast
- 4 cups unbleached all purpose flour
- 2 1/2 tbsp sugar
- 1 tbsp vegetable oil
- 1 1/4 tsp matcha green tea powder
Method
- Dissolve the yeast in lukewarm water in a large bowl.
- Mix all ingredients except matcha green tea powder in a large bowl with yeast water until all is blended.
- Knead the dough until it's smooth, around 5 minutes.
- Let the dough rest for 5 minutes in the bowl. Cover it with plastic wrap or a lid.
- Divide the dough into 2 parts, one 450g and the other 350g dough.
- Add matcha green tea powder to the 350g dough, and knead the dough until well blended--Green tea dough
- Roll out the 450g dough to a 14" x 8" rectangle--white dough
- Roll out the green tea dough to a slightly smaller rectangle than the white dough.
- Brush the surface of the white dough with water, then place the green tea dough on top of the white dough.
- Press the 2 layer-dough gently with your finger, then brush the surface of the green tea dough with water.
- Roll out the dough tightly from the longer edge to form a 20" long log.
- Slice the log into 8 pieces.
- Place the buns on the square baking papers. (cut the parchment paper in squares slightly bigger than the buns.)
- Spread the buns on the steamer and pour some warm water in the bottom of the steamer. Cover the steamer, and let the buns rise for 20 minutes.
- After the final rise, turn on the steamer and steam the buns for 20 minutes until it's cooked.
- Serve immediately.
