Pan-Fried Potato Croquettes
Ingredients
Makes 12 croquettes
- 3 medium potatoes, cooked and mashed
- 1/3 cup peas
- salt to taste
- ground black pepper to taste
- 1 egg, beaten
- dried bread crumbs
- vegetable oil for pan frying
Method
- Mix mashed potatoes, peas, salt and pepper together.
- Shape into small balls. Refrigerate them for about 30 minutes.
- Flatten the balls into patties.
- Dip the balls in the beaten egg, then coat with bread crumbs.
- Pan fry each croquette on a skillet over medium high heat until golden brown on both sides.
