Pan-Fried Potato Croquettes


Ingredients
Makes 12 croquettes

  • 3 medium potatoes, cooked and mashed
  • 1/3 cup peas
  • salt to taste
  • ground black pepper to taste
  • 1 egg, beaten
  • dried bread crumbs
  • vegetable oil for pan frying


Method
  1. Mix mashed potatoes, peas, salt and pepper together.
  2. Shape into small balls. Refrigerate them for about 30 minutes.
  3. Flatten the balls into patties.
  4. Dip the balls in the beaten egg, then coat with bread crumbs.
  5. Pan fry each croquette on a skillet over medium high heat until golden brown on both sides.
