Cream of Broccoli Soup








Ingredients
Makes 4 servings


  • 1 pound broccoli, cut into small pieces
  • 2 tbsp unsalted butter
  • 1 small onion, chopped
  • 1 small potato, choppped
  • 1/4 cup all-purpose flour
  • 4 cups (2 cans) chicken broth
  • 1 cup light cream
  • ground black pepper to taste
  • salt to taste


Method



  1. Heat the butter in a soup pot over medium-high heat. Add the chopped onions, salt and cook until soft.
  2. Add the flour and cook, stirring until the mixture is well blended.
  3. Slowly add the chicken broth, whisking well and bring to a boil. 
  4. Add the broccoli, potato and cook until tender.
  5. Remove the pot from the heat, and puree in a blender in small batches. Return the soup to the pot.
  6. Add the light cream, stirring and bring to bare simmer. 
  7. Adjust the seasoning with salt and pepper.
  8. Serve in individual bowls immediately.
