Stir- Fried Glutinous Rice 油飯



Ingredients                                                              
Makes 4 to 5 servings

  • 2 cups short grain sweet rice
  • 2 cups water
  • 1/4 cup chopped pork
  • 2 tbsp fried shallots
  • 2 tbsp dried shrimp, soaked 
  • 2 tbsp shiitake mushroom, soaked and chopped
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1/2 tsp salt or to taste
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil


Method

1.  In a large bowl, wash the rice 2 to 3 times.
2.  Soak the rice for 2 hours.
3.  Drain the rice well and set aside.
4.  Stir-fried the pork, then shiitake mushroom and dried shrimp.
5.  Add the rice, reduce the heat to medium, and mix the rice well for about 2 minutes.
6.  Add the 2 soy sauces, water, salt, fried shallots and mix thoroughly. 
7.  Cover the lid, and cook for 20 minutes over medium low heat.
8.  Stir the rice, and add the sesame oil, and mix well.
9.  Turn off the heat, and transfer the rice into individual bowls.
10. Serve immediately. Add some hot sauce on top if you like.
