Creme Caramel (Flan)





Ingredients
  • 1 can (390g) evaporated milk
  • 1 can (390g) condensed milk
  • 10 egg yolks
  • 1 teaspoon of vanilla extract

For the caramel:
  • 3/4 cup water
  • 1 cup sugar



Method

  1. In a saucepan, mix the sugar and water. 
  2. Bring to a boil for a few minutes until the sugar caramelize.
  3. Pour the caramelized sugar into aluminum molds - I used a round one.
  4. Spread the caramel on the bottom of the molds.
  5. Mix well the evaporated milk, condensed milk, egg yolks and vanilla by hand.
  6. Gently pour the mixture on top of the caramel on the molds. 
  7. Cover molds individually with aluminum foil.
  8. Steam for about 20 minutes. Or bake for about 45 minutes
  9. Preheat oven to 375º F , and then place the molds on a larger baking pan half filled with hot water. 
  10. Let cool then refrigerate.
  11. To serve: run a thin knife around the edges of the mold to loosen the flan. Place a platter on top of the mold and quickly turn upside down to position the golden brown caramel on top.
