Cream of Broccoli Soup
Makes 4 servings
- 1 pound broccoli, cut into small pieces
- 2 tbsp unsalted butter
- 1 small onion, chopped
- 1 small potato, choppped
- 1/4 cup all-purpose flour
- 4 cups (2 cans) chicken broth
- 1 cup light cream
- ground black pepper to taste
- salt to taste
Method
- Heat the butter in a soup pot over medium-high heat. Add the chopped onions, salt and cook until soft.
- Add the flour and cook, stirring until the mixture is well blended.
- Slowly add the chicken broth, whisking well and bring to a boil.
- Add the broccoli, potato and cook until tender.
- Remove the pot from the heat, and puree in a blender in small batches. Return the soup to the pot.
- Add the light cream, stirring and bring to bare simmer.
- Adjust the seasoning with salt and pepper.
- Serve in individual bowls immediately.
