Finger Sandwich




Ingredients
Makes 6  Sandwiches


  • 9 thinly sliced Pain de Mie, white bread, or whole wheat bread
  • 1/2 lb deli sliced turkey breast
  • 6 deli sliced provolone cheese
  • 3 tbsp shredded dried pork (pork sung)
  • 3 tbsp light mayonnaise
  • 6 leaves green leaf lettuce, or iceberg lettuce

Method
  1. Prepare 3 slices of bread each time, and spread a little mayo on one side of each slice of bread. 
2.  Layer some turkey and 2 slices of provolone cheese on first slice.
3.  Layer the lettuce and 1 tbsp of shredded dried pork on the second slice.
4.  Top with a plain slice.
5.  With a sharp knife, cut the crust off the bread, and save the crusts for other uses( homemade croutons, for example.)
6.  Cut the sandwich diagonally into triangles.
7.  Repeat the same for the other 6 slices.
To help the sandwiches stay fresh before serving them, wrap each one in a plastic wrap. 


Pain de Mie is a very dense bread with a comparatively tender crust. The bread contains more sugar but not nearly as much as commercial white bread. Its neutral flavor makes this bread the best candidate for finger sandwiches. The triangle shape can easily cut in half to make as finger sandwiches for tea party or picnic snack. Pork sung is optional, but definitely enhances the flavor!
